Favorite Family Christmas Recipe: BLOGMAS Day Sixteen.


Hi Cuties, welcome. Today, I share with you a Favorite Family Christmas Recipe which are Tamales. Tamales are a traditional Mexican recipe that have a variety of different fillings from salty to sweet. I asked my mom to give me her recipe and she kindly decided to give me the recipe of 'Tamales de Mole' because it's probably the most traditional and mole is just so good. This is a recipe for large quantity.

ENGLISH

For the Tamales you will need:

Steamer

2 packets (around 100) Corn leaves

5 lbs. Tamale dough

Mole preparation:

4 lbs. Pork meat

3 chiles anchos

3 chiles guauillos

10 chiles of arbol

1/2 an onion

Salt

2 Garlic cloves

5 cloves

5 whole peppercorns

10 almonds

5 saltine crackers

1/4 spoon of cumin

1/4 spoon of ground ginger

oil to fry

Pork Meat Preparation:

Cook the meat thoroughly, once it's done pull the pork and proceed to make the mole.

Mole preparation:

Fry the chiles, crackers, garlic, onion, and almonds. Once, it is fried blend together until well blended and little by little start by adding the salt, cloves, peppercorns, cumin, and ginger. Blend once again, until you get a well mixed sauce.

In a pan add a little oil and add the mixture of mole as well as the meat as you let it come to a boil. Meanwhile, you have your leaves ready with the tamale dough and add a little spread of the mole and start to wrap the leave. Once wrapped, one by one, start putting in the steamer. Put the tamales to steam until the tamale comes of easily.

SPANISH

Se necesita:

Ojas de Elote 2 packets (about 100)

Masa Preparada 5 lbs

Una vaporera

Preparacion de el mole:

Carne de pork 4 lbs

3 chiles anchos

3 chiles guajuillos

10 chiles de arbol

Sal

Media Cebolla

dos dientes de ajo

5 clavos

5 pimientas

10 almendras

5 galletas saladas

1/4 de cucharadita de comino

1/4 de cucharadita de gengibre

aceite para freir

Preparacion de Carne:

Se pone a cozer la carne, ya que este lista se deshebra y se procede hacer el mole

Mole para la Carne:

Se pone a dorar todo los chiles, las galletas, el ajo, cebolla, y las almendras con aceite. Todos estos ingredientes se muelen hasta que quede una salsa bien molida y le agregas los dientes de ajo, sal a el gusto, clavos, pimienta, comino, y gengibre y ya vuelves a moler nuevamente.

En una casuela se pone poquito aceite y agregas el mole y enseguida pones la carne y lo dejas herbir. Mientras, ya tienes tus ojas embarradas de masa y a cada oja le pones a el gusto de mole y envuelves la oja y los vas acomodando en la vaporera poco a poco. Ya los pones a herbir hasta que despegeun de la oja.
